Spring and summer are definitely my most favourite time of year. It probably has something to do with my birthday being in the summer and all the pent up excitement for my birthday to finally arrive as a kiddo. These days, my birthday is the last thing I’m looking forward to (you can only have so many 29th birthdays!) but I very much enjoy watching the seasons change and the yard come to life.
A big shift for my lifestyle and diet was when I planted my first veggie garden. There is something so calming and satisfying watching the garden blossom and the fruits (or veggies) of your labor grow to harvest.
It seemed intimidating at first but there really are some little-fail veggie options to start you off if you’re easing into it.
Tomatoes. Seriously, it’s like a weed. Just make sure you water it when it looks a little curly and the plant really takes care of itself. I mean, there is a lot more to it than that if you want to get into the technical side of things but if your’e just looking to grab a few tomatoes over the course of the summer, you can totally get away with skipping all the pruning and whatnot to get you going (dont tell the botanists I said that).
Mint is another great starter plant. Think Mojitos, Mint Juleps, or a simple flavoured water. Mint grows like a weed and can quickly take over your entire garden so toss it in a container and enjoy!
These guys take a bit more TLC. The pickle! This is my absolute favourite because you can eat them straight off the vine or toss them in to a quick pickling liquid for the crunchy snack we allllll love. These guys need a bit of attention (for the most part, weaving in growth so that it trails up a trellis) but nothing too difficult. Try it out!
