Vegetarian Butternut Squash Chili
Ingredients:
- 1 tbsp olive oil
- 1 medium onion, diced
- I pepper, diced
- 4 cloves of garlic, finely diced
- 3 rib celery, diced
- 2 jalapenos, ribs removed and finely diced
- 1 green pepper, diced
- ½ medium sized butternut squash, peeled and diced
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp salt
- ¼ tsp cinnamon
- 1 14.5oz can of fire roasted diced tomatoes
- 1 can tri-bean mixed beans
- Optional toppings: shredded cheddar cheese, sour cream, finely diced jalapenos (ribs removed), and diced green onions
Instructions:
- This one is super easy – place all ingredients in in a medium sized pot or Dutch oven.
- Simmer for 1.5 hours
- Top with any of the optional toppings.
- Enjoy!
