I’m finally back in my own kitchen so I did some research and came up with an #immunityboosting, #power punching, #soup to get me back up and running! #Carrot, #ginger, #turmeric and #coconutmilk soup to the rescue!

- 2 tablespoons olive oil
- 1 medium leek sliced
- 1 small sweet potato, diced
- 3 medium carrots, peeled and sliced
- 4 cloves garlic, pressed
- 1 quart vegetable broth
- 1 (14 ounce) can of full fat coconut milk
- 1 cup water
- 1 1in piece of ginger peeled and grated
- 3 1in pieces of fresh turmeric peeled and grated
- Juice of one lime
- 1 tbsp of Thai red curry powder
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- (Optional) 1 tablespoon maple syrup (or honey) or to taste if bitter
- Garnish: pumpkin seeds, goat cheese
- Heat 2 tablespoons of olive oil in a 6 quart or larger Dutch oven over medium-high heat. Add the leek, sweet potato, and carrots. Saute for 4 minutes
- Add the garlic, turmeric, ginger and vegetable broth. Cover and simmer until vegetables have softened – around 15 mins
- Use an immersion blender* to puree the soup
- Add the coconut milk, curry, salt & pepper. Taste and adjust seasonings as needed. If too bitter, add a tbsp of maple syrup or honey.
- Serve topped with pumpkin seeds & goat cheese
- Enjoy!
