Sweet or Savory Babka

I’m keeping up with the#bread theme and tried my luck at making#babka. #DELISH! I made#cinnamon #maple???? and maple #bourbon???? #caramalized #onion????. Which way do you lean – #sweet or #savory? See link in bio on how to make them yourself! .

For the dough:

I made one savory and one sweet recipe. Below are the measurements for 1 loaf – if you would like to make two of the same loaves then double the recipe!

Savory:

Instructions: heat olive oil in a large pan, add onions and saute until they become transparent. Add maple syrup, bourbon and vinegar and cook down on low heat until it has the consistency of jam. Season with S&P to taste. Set aside and let cool.

Sweet:

Instructions: combine all ingredients in a small bowl. Set aside and the butter come back to room temp and stiffen to form a paste.

Instructions:

  1. To make the dough: place the yeast and 1/2 teaspoon of the sugar in a small bowl, add the warm water and let sit until foamy.
  2. In a stand mixer and dough hook attachment, mix together the flour and sugar.
  3. Place the butter and milk into a small sauce pan and bring the temp almost to boil. Should be very hot but not yet boiling.
  4. With the mixer on low, add the yeast mixture and allow to incorporate. Slowly add the milk mixture and eggs one at a time. Begin to increase the speed of the mixer and allow the dough to form a ball. Once the dough has formed a ball continue to mix for another 7 minutes – the dough should become elastic.
  5. Cover and set aside allowing for the dough to rise and double in size, at least one hour.
  6. While dough is rising make desired fillings. You have lots of options here. I’ve included my top 2, one savoury and one sweet.

Assembly:

Once the dough has risen, punch down and cut into two equal parts. Roll out into a rectangle (approx 12inx18in) and spread the filling up to 1/2 inch of the edge. Roll the dough along the shorter edge. Cut the dough down the middle of the log, length-wise, exposing the swirls you’ve just created. Line up each open half to face up beside each other and begin to twist one side over the other, keeping the cut side up –

Place on a baking sheet lined with parchment paper. Let rise an additional 30 mins before baking.

Bake at 350degrees for 30 mins or until slightly browned.
