Definitely off diet. No matter what diet you’re on. But WORTH IT!
• 1 1/2 cups extra chunky #peanut #butter
• 1 cup unsalted #butter at room temp
• 1 cup brown sugar
• 1 cup granulated sugar
• 2 #eggs
• 1 tsp #vanilla extract
• 2 cups all-purpose flour
• 1 1/2 tsp baking soda
• 1/2 tsp salt
• 1 cup #chocolate #chips (don’t skimp here!)
• 1/2 cup #peanuts (salted if you have them but peanuts are also optional)
1 Preheat oven to 350 degrees F.
2 With a mixer, beat together peanut butter, softened butter and sugars until creamy and well combined. Add in eggs and vanilla and beat until creamy.
3 Add flour, baking soda and salt to mixture and mix until just combined. Fold in chocolate chips and peanuts (if you’re using them)
4 Scoop cookies onto a cookie sheet. Up to you on how big you want them but they’re fairly rich. The first time I made them I used a 1.5 tbsp scoop and the cookies were a bit too big for my liking and I felt a little guilty… but that’s my issue, not yours. Scoop away! I’m using a 1 tbsp scoop as it relates to the timing below.
5 Bake for approximately 7 to 9 minutes. Remove from oven and allow cookies to cool on a wire cooling rack, but remain on baking sheet, for at least five minutes. Remove from baking sheet, serve and enjoy!
6 YIELD: Approximately 60 cookies
